Apple Streusel Pancakes

Apple Streusel Pancakes

Ingredients
  • ½ c brown sugar
  • 1 Granny Smith apple - shredded
  • ½ t cinnamon + ¼ t cinnamon
  • 1 ¼ c flour
  • 2 T butter + ¼ c butter - melted
  • 1 T baking powder
  • 1 T sugar
  • 1 egg
  • 1 t vanilla extract
  • 1 c milk
In a small bowl, combine brown sugar and ½ t cinnamon. Cut in 2 T butter until crumble. Set aside. In a large bowl, combine melted butter, egg, milk and apple. In a separate bowl, sift together flour, baking powder, cinnamon and sugar. Stir flour mixture into apple mixture.

Heat a lightly oiled frying pan over medium heat. Pour or scoop about ¼ c of batter per pancake. Sprinkle about ½ t of topping over top of each pancake before flipping. Brown both sides and serve hot with syrup or whipped cream.
